Lemon Chicken Casserole

  • 1 0.5 lb cooked chicken, chopped
  • 1 can cream of chicken soup (10.75 oz)
  • 1 cup sour cream
  • 0.3 cup lemon juice
  • 1 sleeve round butter-flavored crackers, crushed (about 1 cup)
  • 0.5 cup butter, melted
  • 3 tbsp poppy seeds

Instructions

    Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.

    Spread chopped chicken evenly over the bottom of the baking dish.

    In a bowl, whisk together cream of chicken soup, sour cream, and lemon juice until smooth. Pour over chicken.

    Sprinkle crushed cracker crumbs evenly over the soup layer.

    Drizzle melted butter over the crackers. Sprinkle poppy seeds over the top.

    Bake 30–45 minutes until bubbly and topping is golden brown.
