  • 3 cup whole wheat pastry flour
  • 1 cup turbinado sugar
  • 4 tbsp Ener-G baking powder
  • 1/
  • 2 cup applesauce
  • 1 tsp salt 2 tsp. grated lemon rind
  • 1 tsp lemon extract
  • 0.5 box firm silken tofu
  • 0.8 cup water

Instructions

    (can be half unbleached) 1/3 c. fresh lemon juice

    FOLD in wet ingredients with dry just until mixed. Do not over mix.

    POUR into oil-sprayed and floured Bundt pan.

    BAKE in oven preheated to 350° for 40 minutes or until toothpick comes out clean.
