- 3 cup whole wheat pastry flour
- 1 cup turbinado sugar
- 4 tbsp Ener-G baking powder

- 2 cup applesauce
- 1 tsp salt 2 tsp. grated lemon rind
- 1 tsp lemon extract
- 0.5 box firm silken tofu
- 0.8 cup water

(can be half unbleached) 1/3 c. fresh lemon juice

FOLD in wet ingredients with dry just until mixed. Do not over mix.

POUR into oil-sprayed and floured Bundt pan.

BAKE in oven preheated to 350° for 40 minutes or until toothpick comes out clean.
