Leftover Casserole

Smart, flexible casserole for using up holiday leftovers — mashed potatoes on the bottom, topped with meat and vegetables in gravy, then finished with stuffing. Zero waste and delicious.

  • 2 0.5 cup leftover turkey, chicken, ham or beef
  • 1 0.5 cup leftover gravy
  • 2 cup mashed potatoes
  • 12 oz mixed vegetables or leftover vegetables
  • 0 leftover stuffing or your favorite stuffing recipe

Instructions

    Preheat oven to 350°F.

    In a 13x9-inch pan, spread mashed potatoes in the bottom.

    Layer meat and vegetables over the potatoes.

    Spread gravy over the top, then top with leftover stuffing (or additional mashed potatoes for a crust).

    Bake approximately 30 minutes or until hot.
