Landon's Quesadillas

  • 1 avocado, peeled and diced
  • 1 lemon, juiced
  • 1 tsp minced garlic
  • 8 flour tortillas
  • 1 cup black bean purée
  • 4 oz Monterey Jack cheese, grated
  • 1 tbsp olive oil
  • 0.5 cup prepared salsa
  • 0.5 cup sour cream

Instructions

    Preheat oven to 400°F.

    In a bowl, combine avocado, lemon juice, and garlic. Mash until smooth but still chunky. Season with salt and pepper.

    Spread 1/4 cup black bean purée on one tortilla. Sprinkle 1/4 of the cheese over the purée. Spread 1/4 of the guacamole over the cheese. Top with another tortilla.

    Repeat to make 4 quesadillas. Brush the tops with olive oil.

    Bake for 8 to 10 minutes until crispy and cheese is melted. Cut into wedges and serve with salsa and sour cream.
