Lake Havasu Casserole

Quick and creamy mashed potato casserole with spinach, green chiles, sour cream, cayenne and Colby cheese. Satisfying Southwest-style vegetarian side.

  • 4 cup mashed potatoes
  • 1 cup sour cream
  • 0.5 tsp cayenne pepper
  • 1 medium onion, chopped
  • 0.3 cup butter or margarine
  • 10 oz frozen chopped spinach, thawed, drained and squeezed dry
  • 0.5 cup green chile, chopped
  • 1 cup shredded Colby cheese
  • 0 salt and pepper to taste

Instructions

    Combine all ingredients except cheese in a well-greased glass baking dish.

    Sprinkle cheese over the top.

    Bake in a 350°F oven for 20 minutes.
