Kids Love It Casserole

Family-friendly baked macaroni casserole with ground beef in spaghetti sauce, chopped spinach, eggs and cheddar cheese, topped with Parmesan for a nutritious crowd-pleaser.

  • 1 0.5 lb ground beef
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 14 oz spaghetti sauce with mushrooms
  • 8 oz tomato sauce
  • 6 oz tomato paste
  • 0.8 cup water
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 7 oz macaroni shells, cooked and drained
  • 10 oz frozen chopped spinach, thawed and drained
  • 2 large eggs, beaten
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup soft bread crumbs
  • 0.3 cup grated Parmesan cheese

Instructions

    In a saucepan, cook beef, onion and garlic until meat is no longer pink; drain.

    Add spaghetti sauce, tomato sauce, tomato paste, water, Italian seasoning, salt and pepper; bring to a boil. Reduce heat; simmer covered 10 minutes.

    Stir in macaroni, spinach, eggs, cheese and bread crumbs. Pour into a greased 13x9-inch baking dish.

    Sprinkle with Parmesan cheese. Cover and bake at 350°F for 30-35 minutes until bubbly.

    Let stand 10 minutes before serving.
