- 4 eggs
- 4 cup kale, chopped
- 1 tbsp fresh sage, chopped
- 1/3 cup parmesan cheese, grated
- 0.5 tsp pepper
- 0.5 tsp salt

Preheat the griddle to medium heat. Spray griddle top with cooking spray. Add kale on hot griddle top and cook for minutes or until wilted. In a bowl, beat eggs then add parmesan, sage, pepper, and salt. Pour egg mixture and cook for 8-10 minutes or until firm. Servings and enjoy.
