Jambalaya (Slow Cooker)
A classic Louisiana jambalaya made in the slow cooker: chicken and shrimp with onion, carrots, tomatoes, and herbs over cooked rice.

- 1 whole chicken, cut up
- 3 onions, chopped
- 1 carrot, sliced
- 1 clove garlic, minced
- 0.5 tsp dried oregano
- 0.5 tsp dried basil
- 1 tsp salt
- 1/8 tsp black pepper
- 14 oz canned cut-up tomatoes
- 1 lb raw shrimp, shelled
- 2 cup cooked rice

In slow cooker, combine chicken with onions, carrots, garlic, oregano, basil, salt, pepper, and tomatoes.

Cook on LOW 4–5 hours.

Add shrimp and cooked rice. Cook on HIGH 30–40 minutes until shrimp is pink and done.
