Jambalaya
Southern slow cooker jambalaya with chicken, shrimp, onions, tomatoes, and rice cooked first on low then finished on high.

- 1 each chicken, cut-up
- 3 each onions, chopped
- 1 each carrot, sliced
- 1 clove garlic, minced
- 0.5 tsp oregano
- 0.5 tsp basil
- 1 tsp salt
- 1/8 tsp pepper
- 14 oz can cut-up tomatoes
- 1 lb shrimp, shelled and raw
- 2 cup rice, cooked

In slow cooker, combine chicken with onions, carrots, garlic, oregano, basil, salt, pepper, and tomatoes.

Cook on LOW 4–5 hours.

Add shrimp and rice.

Cook on HIGH 30–40 minutes until shrimp is done.
