Italian Pepper Sausage

Homemade Italian sausage spiced with crushed red pepper, fennel, paprika, and garlic — made with fresh pork.

  • 4 0.5 lb fresh lean pork
  • 1 0.5 lb fresh pork fat
  • 1 whole medium onion, chopped
  • 1 clove large garlic clove, minced
  • 3 tsp salt
  • 1 0.5 tsp freshly ground black pepper
  • 1 0.5 tsp paprika
  • 2 tsp crushed dried red peppers
  • 2 tsp fennel seeds
  • 0.5 tsp crushed bay leaf
  • 0.3 tsp thyme
  • 1/3 cup red wine or water
  • 0.3 tsp coriander

Instructions

    Grind the lean and fat pork, onion, and garlic together.

    Add all seasonings and mix thoroughly.

    Add wine (or water) and mix well.

  4. 4

    Force through a sausage stuffer into casing, or use loose in recipes that call for ground sausage. Makes about 6.5 lbs.
