Italian Pepper Sausage
Homemade Italian sausage spiced with crushed red pepper, fennel, paprika, and garlic — made with fresh pork.

- 4 0.5 lb fresh lean pork
- 1 0.5 lb fresh pork fat
- 1 whole medium onion, chopped
- 1 clove large garlic clove, minced
- 3 tsp salt
- 1 0.5 tsp freshly ground black pepper
- 1 0.5 tsp paprika
- 2 tsp crushed dried red peppers
- 2 tsp fennel seeds
- 0.5 tsp crushed bay leaf
- 0.3 tsp thyme
- 1/3 cup red wine or water
- 0.3 tsp coriander
Instructions

Grind the lean and fat pork, onion, and garlic together.

Add all seasonings and mix thoroughly.

Add wine (or water) and mix well.

Force through a sausage stuffer into casing, or use loose in recipes that call for ground sausage. Makes about 6.5 lbs.
