Italian Pancake Lasagna Casserole

  • 2 eggs
  • 0.7 cup milk
  • 0.5 cup all-purpose flour
  • 0.3 tsp salt
  • 1 lb lean ground beef
  • 6 oz can tomato paste
  • 2 tbsp instant minced onion
  • 1 tsp dried basil
  • 0.8 tsp garlic salt
  • 0.5 tsp dried oregano
  • 1 cup creamed cottage cheese
  • 2 cup shredded mozzarella cheese
  • 0.3 cup grated Parmesan cheese

Instructions

    Preheat oven to 375°F.

    Beat eggs and milk together. Add flour and salt; beat until smooth. Make 4 pancakes in a lightly greased 9-inch skillet, browning both sides.

    Brown ground beef; add tomato paste, minced onion, basil, garlic salt, oregano, salt, and pepper.

    In a 10-inch pie pan or round baking dish, layer: 1 pancake, ¼ cup cottage cheese, ¼ of the meat mixture, ½ cup mozzarella, 1 tbsp Parmesan. Repeat with remaining ingredients, ending with cheese.

    Bake at 375°F for 30–35 minutes. Cut into wedges to serve.
