Italian Pancake Lasagna

  • 2 eggs
  • 0.7 cup milk
  • 0.5 cup all-purpose flour
  • 0.3 tsp salt
  • 1 lb lean ground beef
  • 6 oz tomato paste
  • 2 tbsp instant minced onion
  • 1 tsp dried basil
  • 0.8 tsp garlic salt
  • 0.5 tsp dried oregano
  • 0.3 tsp black pepper
  • 1 cup creamed cottage cheese
  • 2 cup shredded mozzarella cheese
  • 0.3 cup grated Parmesan cheese

    Preheat oven to 375°F (190°C).

    Make pancake batter: whisk eggs and milk together, then add flour and ¼ tsp salt; beat until smooth.

    Heat a lightly greased 9-inch skillet over medium-high heat. Pour ⅓ cup batter, tilting to spread evenly. Cook until set and lightly browned, flip, cook other side. Make 4 pancakes total.

    Brown ground beef in a skillet; drain fat. Stir in tomato paste, minced onion, basil, garlic salt, oregano, salt, and pepper.

    Place one pancake in a 10-inch round baking pan. Spread ¼ cup cottage cheese, one-quarter of the meat mixture, ½ cup mozzarella, and 1 tbsp Parmesan over it.

    Repeat layers with remaining pancakes, ending with cheese on top.

    Bake 30–35 minutes until heated through and cheese is bubbly.
