Italian Cookies

Orange-scented twice-baked Italian cookies with a crispy texture, similar to biscotti but made with orange juice.

  • 3 whole eggs
  • 0.5 cup orange juice
  • 1 cup sugar
  • 1 cup vegetable oil
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 3 0.8 cup flour
  • 2 tbsp baking powder
  • 0.5 cup almonds, chopped (optional)

Instructions

    In a large bowl, beat eggs, orange juice, and sugar. Add oil and mix well.

    Add salt, flour, and baking powder; mix with a wooden spoon. Add vanilla and chopped almonds.

    Shape dough into two 12-inch half-moon logs on an ungreased cookie sheet. Bake at 350°F until golden, about 15 minutes.

    Remove from oven and let cool slightly. Cut into ½-inch thick slices and re-bake at 450°F until golden on both sides.
