Italian Chicken (Crockpot)

Chicken pieces coated in Parmesan and paprika, slow-cooked over a bed of zucchini with mushrooms and chicken stock.

  • 1 whole frying chicken, cut into pieces
  • 1 tsp seasoned salt
  • 0.3 cup flour
  • 2 tbsp Parmesan cheese, grated
  • 0.5 tsp paprika
  • 0.5 cup chicken stock
  • 1 can mushrooms, drained
  • 2 medium zucchini, sliced into medium pieces

Instructions

    Sprinkle chicken with seasoned salt.

    Combine flour, salt, pepper, Parmesan cheese, and paprika. Coat chicken pieces with mixture.

    Place sliced zucchini in bottom of crockpot. Pour stock over zucchini. Add mushrooms.

    Arrange coated chicken on top. Cover and cook on LOW 6–8 hours until chicken is tender.

    Garnish with freshly ground black pepper and parsley before serving.
