Italian Broiled Shrimp

- 2 lb jumbo shrimp, shelled, tails on
- 0.3 cup olive oil
- 2 tbsp garlic, minced
- 0.3 cup all-purpose flour
- 0.3 cup butter, melted
- 4 tbsp fresh parsley, minced
- 4 tbsp butter (for sauce)
- 2 tbsp all-purpose flour (for sauce)
- 1 cup hot water
- 1 tsp lemon juice
- 0.3 tsp black pepper

Shell shrimp, leaving tails on. Pat dry, then dust lightly with flour.

Stir olive oil and melted butter together in a flat broiler-safe baking dish; add shrimp.

Broil at medium heat for 8 minutes.

Meanwhile, make the drawn butter sauce: melt 2 tablespoons butter in a saucepan, whisk in flour, lemon juice and pepper until smooth. Add 1 cup hot water and bring to a boil, stirring constantly. Reduce heat and cook 5 minutes. Stir in remaining 2 tablespoons butter until melted.

Add garlic and parsley to the drawn butter sauce and pour over shrimp.

Stir until shrimp are coated, then broil 2 more minutes until golden.

Serve immediately with crusty bread.
