Italian Beef Stew (Crockpot)

Hearty Italian-seasoned beef stew with carrots, onion, and whole tomatoes — add pasta in the last hour for a complete one-pot dinner.

  • 2 0.5 lb beef stew meat, cut in 1" cubes
  • 4 whole carrots, cut in 1/2" slices
  • 1 large onion, thinly sliced
  • 28 oz whole canned tomatoes, cut up
  • 2 cup water
  • 1 tsp salt
  • 1 0.5 tsp Italian seasoning
  • 2 tsp instant beef bouillon
  • 1 cup uncooked mostaccioli or other pasta

Instructions

    Brown meat in slow cooker on top of range or in a skillet over medium heat.

    Transfer meat to slow cooker. Add carrots, onion, tomatoes, water, salt, Italian seasoning, and bouillon. Stir to combine.

    Cover and cook on LOW 7–9 hours.

    Add uncooked pasta in the last 45 minutes of cooking. Stir, cover, and continue on LOW until pasta is tender.

    Serve immediately.
