Individual Plum Pies With Vanilla Bean Ice Cream

- 2 tbsp butter
- 3 lb fresh plums, pitted and quartered
- 0.5 cup sugar
- 1 tsp ground cinnamon
- 0.5 cup water
- 2 tbsp cornstarch
- 2 cup all-purpose flour
- 0.8 cup lard or vegetable shortening
- 3 tbsp ice water
- 6 scoops vanilla bean ice cream

Preheat oven to 375°F. In a large sauté pan over medium heat, melt the butter. Add plums and sauté for 2 minutes. Stir in sugar, cinnamon, and salt; sauté 2 more minutes.

Whisk together the water and cornstarch. Stir into the plum mixture and cook until thickened, about 2 minutes. Cool.

For the crust: combine flour, 1/2 teaspoon salt, and 1-1/2 teaspoons sugar. Cut in lard until crumbly. Add ice water until dough just comes together. Divide into 6 portions.

Roll each portion into a round. Fit into individual tart pans or ramekins, trimming excess. Fill with plum mixture. Fold dough over edges.

Bake for 30 to 35 minutes until crust is golden. Serve warm with a scoop of vanilla bean ice cream.
