Indian Corn and Beef Casserole

- 1 lb lean ground beef
- 1 tbsp vegetable oil
- 1 onion, chopped
- 2 clove garlic, minced
- 1 tbsp chili powder
- 0.5 tsp crushed red pepper flakes
- 2 ears sweet corn, kernels cut off
- 2 ears sweet corn, cut into 1-inch rounds
- 14 oz canned diced tomatoes
- 0.5 cup beef broth
- 1 tbsp cornstarch
- 0.5 tsp salt
- 0.3 tsp black pepper

Heat oil in a large skillet over medium-high heat. Add ground beef and cook until no longer pink, breaking apart.

Add onion, garlic, chili powder, and red pepper flakes. Cook and stir 3–4 minutes until onion is softened.

Whisk cornstarch into beef broth until smooth. Add to skillet along with diced tomatoes.

Cook, stirring, until mixture comes to a boil and thickens.

Add corn kernels and corn rounds. Stir to combine.

Cover and simmer over medium-low heat 20–25 minutes until corn is cooked through.

Season with salt and pepper. Serve over mashed potatoes.
