Impossible Mexican Fiesta Casserole
Mexican-inspired impossible pie with a Bisquick crust topped with seasoned ground beef, sliced tomatoes, green pepper and a creamy cheese-sour cream layer.

- 1 lb lean ground beef
- 0 salt and pepper to taste
- 4 oz shredded cheddar cheese
- 1 cup sour cream
- 0.7 cup mayonnaise
- 2 tbsp finely chopped onion
- 2 cup buttermilk biscuit baking mix
- 0.5 cup water
- 2 medium tomatoes, thinly sliced
- 0.8 cup green bell pepper, chopped
- 0 paprika (optional)

Preheat oven to 375°F. Grease a 13x9-inch baking pan.

Cook and stir meat in large skillet until brown; drain. Season with salt and pepper; set aside.

Mix cheese, sour cream, mayonnaise and onion; set aside.

Stir baking mix and water together until a soft dough forms. Pat dough into prepared pan, pressing 1/2 inch up the sides.

Layer meat, tomato slices and green pepper onto dough. Spoon sour cream mixture over top; sprinkle with paprika.

Bake uncovered until edges of dough are light brown, 25-30 minutes. Cool 5 minutes and cut into squares.
