I Hate Zucchini Casserole
Even zucchini skeptics love this — shredded zucchini with mozzarella cheese sandwiched between buttery Chicken-in-a-Biskit cracker crumbs and baked until golden.

- 0.5 cup butter
- 2 cup Chicken-in-a-Biskit crackers, crushed
- 4 cup zucchini, shredded
- 2 cup shredded mozzarella cheese
- 0.3 cup chopped onions
- 2 large eggs, beaten
- 0 salt and pepper to taste

Melt butter and add crumbs; mix well. Spread half on bottom of a 9-inch square pan.

Mix zucchini, mozzarella cheese, onions, eggs, salt and pepper; spread over crumbs.

Put remaining crumbs on top.
