  • 4 boneless skinless chicken breasts, cut into ½-inch chunks
  • 1 tbsp chili powder
  • 2 tbsp olive oil
  • 15 oz canned baked beans
  • 14 0.5 oz canned stewed tomatoes, undrained
  • 1 tbsp smoky barbecue sauce
  • 14 0.5 oz canned green beans, drained
  • 0.3 tsp dill weed
  • 1 tbsp maple syrup
  • 4 0.3 oz corn muffin mix

Instructions

    Preheat oven to 400°F (200°C). Spray a 9×13-inch baking dish with cooking spray.

    Sprinkle chili powder over chicken chunks. Heat olive oil in a nonstick pan over medium heat and cook chicken until opaque, about 5–6 minutes.

    Stir in baked beans, stewed tomatoes, and barbecue sauce.

    Toss green beans with dill weed and stir into chicken mixture. Simmer 5–10 minutes.

    Prepare corn muffin mix according to package directions.

    Pour chicken mixture into prepared baking dish. Drop corn muffin batter by spoonfuls on top.

    Bake 20–25 minutes until topping is golden brown.

    Remove from oven and immediately brush corn muffin topping with maple syrup.
