Hummingbird Cake
A Carolina mountain recipe for Hummingbird Cake.

- 3 cups of plain flour
- 2 cups of sugar
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1 teaspoon cinnamon
- 2 cups of chopped pecans
- 1 1/2 cups of vegetable oil
- 3 eggs
- 1 1/2 teaspoons of vanilla
- 1 – 8 ounce can of crushed pineapple
- 3 bananas, mashed
Instructions

Place all of the dry ingredients in a large bowl.

Add all of the other ingredients and stir until mixed well. Do not beat.

Pour into a greased and floured tube pan.

Bake at 325 degrees for 1 hour and 15 minutes.

Remove from the oven and allow to cool in the pan.
