Houston's Grilled Chicken Salad

- 4 count boneless skinless chicken breasts
- 8 cup mixed salad greens
- 1 cup carrots, cut into thin strips
- 1 cup thin tortilla strips (fried or baked)
- 0.5 cup fresh lime juice
- 4 tsp honey mustard
- 7 0.5 tbsp honey
- 4 tbsp vegetable oil
- 2 clove garlic, minced fine
- 1 tsp black pepper
- 0.5 tsp salt
- 4 tbsp peanut butter
- 4 tbsp soy sauce
- 4 tbsp hot water
- 2 tsp sesame oil
- 1 tbsp ground ginger

Mix lime dressing: whisk together lime juice, honey mustard, honey, vegetable oil, garlic, pepper, and salt. Set aside.

Mix peanut sauce: combine peanut butter, soy sauce, hot water, sesame oil, and ground ginger. Whisk until smooth. Set aside.

Grill chicken breasts over medium-high heat, about 6–7 minutes per side until cooked through. Slice thin.

In a large bowl, toss salad greens and carrots with the lime dressing.

Add tortilla strips and toss briefly.

Divide salad among four plates. Top each with sliced grilled chicken. Drizzle peanut sauce over the chicken and serve.
