Hot Spinach Salad

  • 6 slice bacon, diced
  • 2 tbsp red wine vinegar
  • 1 tbsp sugar
  • 0.3 tsp salt
  • 0.3 tsp freshly ground black pepper
  • 1 lb fresh baby spinach leaves
  • 2 large hard-boiled eggs, thinly sliced
  • 0.5 cup sliced fresh mushrooms

Instructions

    Cook bacon in a large skillet over medium heat until crisp. Remove with slotted spoon and drain on paper towels.

    Drain off all but 2 tablespoons of the bacon drippings.

    Add red wine vinegar, sugar, salt, and pepper to the drippings in the pan. Heat, stirring, until the sugar dissolves.

    Place spinach in a large serving bowl. Pour the hot dressing over the spinach and toss quickly.

    Top with hard-boiled egg slices, mushrooms, and crumbled bacon.

    Serve immediately.
