Hot Shrimp Salad Casserole

  • 1 lb cooked shrimp, peeled
  • 2 cup diced celery
  • 0.5 cup sliced water chestnuts
  • 2 hard-boiled eggs, chopped
  • 2 tbsp grated onion
  • 0.3 cup mayonnaise
  • 2 tsp lemon juice
  • 0.5 tsp salt
  • 0.5 cup sharp Cheddar cheese, grated
  • 1 cup unsalted potato chips, crushed

Instructions

    Preheat oven to 400°F (200°C). Grease an 11×8-inch casserole dish.

    Combine shrimp, celery, water chestnuts, and chopped eggs in a large bowl.

    In a small bowl, blend mayonnaise, lemon juice, salt, and grated onion. Stir into shrimp mixture.
