Hot Shrimp Salad Casserole

- 1 lb cooked shrimp, peeled
- 2 cup diced celery
- 0.5 cup sliced water chestnuts
- 2 hard-boiled eggs, chopped
- 2 tbsp grated onion
- 0.3 cup mayonnaise
- 2 tsp lemon juice
- 0.5 tsp salt
- 0.5 cup sharp Cheddar cheese, grated
- 1 cup unsalted potato chips, crushed

Preheat oven to 400°F (200°C). Grease an 11×8-inch casserole dish.

Combine shrimp, celery, water chestnuts, and chopped eggs in a large bowl.

In a small bowl, blend mayonnaise, lemon juice, salt, and grated onion. Stir into shrimp mixture.
