Hot Sausage and Rice Casserole

  • 1 lb hot Italian or breakfast sausage, crumbled
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup long-grain rice (uncooked, not instant)
  • 2 can cream of chicken soup (10.75 oz each)
  • 1 can cream of mushroom soup (10.75 oz)

Instructions

    Preheat oven to 400°F (200°C). Spray a 9×13-inch baking dish with cooking spray.

    Brown sausage in a skillet over medium heat, breaking it up as it cooks. Drain excess fat.

    In a large bowl, combine browned sausage, celery, onion, green pepper, uncooked rice, cream of chicken soups, and cream of mushroom soup. Mix well.

    Pour mixture into prepared baking dish. Cover tightly with foil.

    Bake for 1 hour until rice is tender and casserole is bubbly.

    Let stand 5 minutes before serving.
