Honey Lemon Baked Chicken

- 1 whole chicken, cut into serving pieces (about 3-4 lbs)
- 0.5 cup honey
- 0.3 cup fresh lemon juice
- 1 tsp salt

Preheat oven to 350°F. Arrange chicken pieces skin-side down in a single layer in a shallow baking pan.

In a small bowl, combine honey, lemon juice and salt. Pour half of this sauce over the chicken.

Cover and bake for 30 minutes.

Remove cover, turn chicken pieces over. Pour the remaining sauce over chicken. Replace cover and bake another 25–30 minutes until cooked through.

Remove cover for the last 10 minutes to allow browning. Serve immediately with rice or roasted vegetables.
