  • 2 cup white cabbage, shredded
  • 2 cup red cabbage, shredded
  • 2 cup assorted greens (mustard greens, collards, or spinach), shredded
  • 1 cup thinly sliced red onions
  • 1 cup chopped green onions (green parts only)
  • 0.5 cup chopped parsley
  • 0.8 cup olive oil
  • 0.3 cup rice wine vinegar
  • 2 tsp sugar
  • 0.5 cup Creole or whole-grain mustard
  • 1 tsp minced garlic
  • 0.3 tsp cayenne pepper

Instructions

    In a large bowl, combine the white cabbage, red cabbage, greens, red onions, green onions, and parsley.

    In a separate bowl, whisk together the olive oil, rice wine vinegar, sugar, mustard, garlic, salt, pepper, and cayenne.
