- 2 eggs
- 2 tbsp. onion, chopped
- 2 tbsp. red pepper, chopped
- 2 tbsp. cooked sausage, sliced thin
- 2 tsp. butter
- 2 tbsp. salsa
- l soft flour tortilla (recipe follows)
- salt and pepper to taste
Instructions

Saute onion, red pepper and sausage in butter in small frying pan until tender.

Beat eggs, salt and pepper together.

Pour egg mixture over sausage mixture.

Cook on medium heat; turn once and cook other side.

To serve: spread salsa on warmed tortilla

top with cooked egg mixture and roll.
