Herbed Shrimp and Feta Casserole

- 2 whole large eggs
- 1 cup evaporated milk
- 1 cup plain yogurt
- 3 oz feta cheese, crumbled
- 5 oz shredded Swiss cheese
- 0.3 cup fresh parsley, chopped
- 1 tsp dried basil
- 1 tsp dried oregano
- 4 clove garlic, minced
- 0.5 lb angel hair pasta, cooked
- 16 oz mild chunky salsa
- 1 lb medium shrimp, peeled and uncooked
- 0.5 lb shredded mozzarella cheese

Preheat oven to 350°F. Coat an 8x12-inch baking dish with cooking spray.

In a bowl, blend eggs, milk, yogurt, feta, Swiss cheese, parsley, basil, oregano, and garlic.

Spread half the cooked angel hair pasta over the bottom of the baking dish.

Cover with salsa. Add half the shrimp.

Spread remaining pasta over the shrimp. Pour the egg-cheese mixture over the pasta.

Add the remaining shrimp on top. Sprinkle with mozzarella cheese.

Bake at 350°F for 30 to 40 minutes until set and golden.
