Herbed Goat Cheese And Prosciutto Shrimp

  • 12 tbsp goat cheese
  • 1 tsp chopped fresh parsley
  • 1 tsp chopped fresh tarragon
  • 1 tsp chopped fresh chervil
  • 1 tsp chopped fresh oregano
  • 2 tsp minced garlic
  • 12 large shrimp, peeled, tail-on, and butterflied
  • 12 slice thin prosciutto
  • 2 tbsp olive oil
  • 1 tsp white truffle oil

Instructions

    In a mixing bowl, blend the goat cheese, parsley, tarragon, chervil, oregano, and garlic. Season with salt and pepper.

    Season the butterflied shrimp with salt and pepper. Press one tablespoon of the herbed goat cheese filling into the cavity of each shrimp.

    Wrap each stuffed shrimp tightly with one slice of prosciutto.

    In a sauté pan over high heat, heat the olive oil. Sear the wrapped shrimp for 2 minutes per side until prosciutto is crispy and shrimp are cooked through.

    Arrange on a platter, drizzle with white truffle oil, and serve immediately.
