Heirloom Apple Tart

- 1 cup brown sugar
- 0.5 cup sugar, plus 2 tbsp
- 4 tbsp Armagnac or brandy
- 4 heirloom apples, peeled, cored, and quartered
- 0.3 cup golden raisins
- 1 tbsp butter
- 3 cup whole milk
- 5 eggs
- 1 0.3 cup all-purpose flour, plus 2 tbsp
- 4 0.5 tsp vanilla extract
- 2 cup sweetened whipped cream

Preheat oven to 350°F. Line a 10-inch springform pan with parchment paper.

In a cast iron skillet over high heat, combine 1/2 cup sugar, brown sugar, and 2 tablespoons Armagnac. Cook until caramelized. Add apples and raisins; cook until apples are slightly softened, about 5 minutes. Add butter.

Pour the caramelized apple mixture into the prepared pan.

In a blender, combine milk, eggs, flour, remaining sugar, remaining Armagnac, and vanilla. Blend until smooth. Pour batter gently over the apples.

Bake for 45 to 55 minutes until set and golden. Cool completely in the pan.

Unmold and dust with powdered sugar. Serve with sweetened whipped cream and fresh mint.
