- 0.3 cup balsamic vinegar
- 1 tsp minced garlic
- 2 tbsp chopped fresh herbs (parsley, basil, chervil, tarragon)
- 0.5 lb assorted heirloom tomatoes
- 2 Creole or vine-ripened tomatoes
- 1 large Vidalia onion, peeled and sliced
- 2 Haas avocados, sliced
- 6 oz fresh mozzarella, sliced
- 12 baguette croutons (about 1-inch thick)

In a small bowl, whisk together the olive oil, balsamic vinegar, garlic, and fresh herbs. Season with salt and pepper.

Slice the heirloom and Creole tomatoes into various shapes. Quarter the Vidalia onion and separate into layers.

Arrange the tomatoes, onion, avocado slices, and mozzarella on a large serving platter.

Drizzle the balsamic vinaigrette generously over everything. Tuck baguette croutons around the salad.
