  • 2 cup chicken stock
  • 1 Tablesp butter (optional)
  • 2 Tablesps olive oil (optional)
  • 1 cup raw, chopped broccoli
  • 1 cup diced, skinless chicken
  • 1/3 cup pasta
  • ½ cup raw, chopped cauliflower (about 1-inch pieces)
  • ½ cup chopped sweet green pepper
  • ½ cup chopped zucchini
  • salt to taste
  • freshly ground black pepper to taste

Instructions

    Shred the chicken into bite-size pieces using 2 forks; discard the skin and bones.

    Return the soup to a boil over medium-high heat and add the noodles.

    Cook, uncovered, until the noodles are al dente.

    Simmer the egg noodles, stirring occasionally, until tender, about another 5 minutes.

    Return the shredded chicken to the pot and add the black pepper.

    Taste and add more salt if needed.

    Remove the soup pot from heat as soon as the noodles are just barely tender.

    To serve, divide the soup among bowls and top with chopped parsley and more black pepper.
