Hawaiian Pineapple Bars

Buttery shortbread bars layered with creamy pineapple cheesecake filling and topped with toasted coconut.

  • 1 cup butter or margarine
  • 2 cup flour
  • 1 cup sugar for crust
  • 16 oz cream cheese (2 packages), softened
  • 0.3 cup sugar for filling
  • 0.3 cup milk
  • 20 oz can crushed pineapple, well drained
  • 2 tsp vanilla
  • 2 cup coconut
  • 2 tbsp melted butter for topping

Instructions

    Mix together butter, flour, and 1 cup sugar. Press into a 9x13 pan. Bake at 350°F for 15 minutes. Cool completely.

    Beat cream cheese with 1/4 cup sugar and milk. Add vanilla; mix well. Fold in pineapple by hand.

    Spread cream cheese mixture over cooled crust.

    Mix coconut and 2 tablespoons melted butter; sprinkle evenly over cream cheese layer.

    Bake at 350°F for 20 minutes. Cool completely and refrigerate before cutting and serving.
