Hash Brown Scramble

A Blackstone griddle recipe for Hash Brown Scramble.

  • 2 russet potatoes, shredded, rinsed, and drained
  • 8 eggs, beaten
  • 1 cup cheddar cheese
  • 6 slices bacon, cut into small pieces
  • 1/3 cup green onion, chopped
  • vegetable oil

Instructions

    Preheat griddle to medium heat and brush with vegetable oil.

    On one side, place the potatoes on the griddle and spread in a 1/2 inch thick layer. Cook the potatoes until golden brown and then flip.

    Add the bacon to the other side of the griddle and cook until the fat has rendered.

    Add the eggs and cheese to the top of the hash browns and stir in the bacon and green onion.

    Cook until the cheese has melted and divide equally among 4 plates.
