Harvest Bounty Casserole

Garden vegetable casserole with green beans, bell pepper, tomatoes and cheddar cheese, set in a savory Bisquick egg custard. A great way to use fresh summer produce.

  • 1 0.5 cup cut-up green beans, cooked and drained
  • 1 medium green bell pepper, chopped
  • 3 medium tomatoes, chopped
  • 1 0.5 cup shredded cheddar cheese
  • 0.5 cup Bisquick baking mix
  • 1 tsp salt
  • 0.5 tsp cayenne pepper
  • 0.5 cup milk
  • 3 large eggs

Instructions

    Preheat oven to 350°F. Grease an 8-inch square baking dish.

    Spread beans and peppers in dish; sprinkle with tomatoes and cheese.

    Beat remaining ingredients with mixer until smooth. Pour over vegetables and cheese.

    Bake uncovered until golden brown, 45-50 minutes.

    Let stand 10 minutes before serving.
