- 12 oysters freshly shucked oysters
- 0.5 cup all-purpose flour, seasoned with salt and pepper
- 9 large eggs, divided
- 1 cup fine cracker crumbs
- 3 tbsp butter
- 1 pinch salt and pepper

Drain oysters on paper towels. Dip into seasoned flour, then into 1 well-beaten egg, then into cracker crumbs.

Melt butter in a large skillet over medium heat. Fry coated oysters for a few minutes until nicely browned on both sides.

Beat remaining 8 eggs with salt and pepper. Pour over the fried oysters in the skillet.

Cook until the egg mixture is firm on the bottom. Turn with a large spatula and cook the second side 1 to 2 minutes longer. Serve immediately.
