Ham and Potato Casserole

  • 4 potatoes, peeled and thinly sliced
  • 1 onion, thinly sliced
  • 0.5 tbsp olive oil
  • 0.5 lb country ham, thinly sliced then cut into strips
  • 1 cup ricotta cheese
  • 1 0.5 tbsp fresh rosemary, chopped
  • 0.5 tsp black pepper
  • 1 0.5 cup whole milk
  • 0.5 cup Swiss cheese, grated

Instructions

    Preheat oven to 375°F (190°C).

    Toss sliced potatoes and onions together; set aside.

    Heat olive oil in a skillet over medium heat. Add ham strips and sauté 2 minutes until heated through.

    Mix ricotta, rosemary, and black pepper in a small bowl.

    Arrange half the potato-onion mixture in a 9×13-inch baking dish.

    Spread ricotta mixture over potatoes. Lay ham strips over the ricotta.

    Top with remaining potato-onion mixture. Pour milk evenly over the entire casserole.

    Bake for 1½ hours until potatoes are tender and sauce is thick and bubbly.

    Sprinkle Swiss cheese over the top and bake 15–20 minutes more until cheese is melted.
