- 4 cup all purpose flour
- 1 tbsp baking powder
- 1 tbsp cinnamon
- 2 tsp baking soda
- 1 tsp ginger
- 1 tsp nutmeg
- 1 tsp salt
- 0.5 tsp allspice
- 0.5 tsp cloves
- 4 eggs
- 1 can pumpkin, 14 oz.
- 1 cup apple juice
- 0.8 cup melted butter
- 1 0.5 cup packed brown sugar
- 1 0.5 cup chopped pecans

Preheat oven to 375F and grease 24 muffin pans. Stir together flour, baking powder, cinnamon, baking soda, and spices. In separate bowl, beat eggs, and mix in pumpkin, apple juice and butter. Blend in brown sugar. Blend wet ingredients into dry

ingredients until just moistened. Fold in half the pecans. Spoon into greased muffin pans, sprinkle with remaining pecans. Bake 25 minutes or until firm to the touch. Cool before removing from pan. Cheesey Corn Muffins
