Classic Guacamole

  • 6 ripe avocados, peeled and pitted
  • 1 0.5 white onions, chopped
  • 0.5 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 1 small zucchini, pureed
  • 6 tbsp olive oil
  • 6 serrano chiles, finely chopped
  • 2 large tomatoes, chopped (for garnish)
  • 1 tsp salt to taste

Instructions

    Place avocados in a glass bowl and mash with a fork.

    Add onion, cilantro, lime juice, pureed zucchini, olive oil, chiles and salt. Mix thoroughly to form a smooth purée.

    To prevent browning, place the avocado pits back into the guacamole until ready to serve.

    To serve: Spoon guacamole into a flat bowl. Garnish with chopped tomato on one side, chiles and cilantro leaves in the center. Serve with tortilla chips (totopos).
