Gruyere And Potato Gratine

- 0.3 cup all-purpose flour
- 2 cup whole milk
- 1 pinch fresh nutmeg
- 1 cup grated Gruyère de Comté
- 1 lb white potatoes, sliced 1/2-inch thick, blanched
- 2 tbsp chopped chives, for garnish

Preheat oven to 400°F.

In a saucepan over medium heat, combine the vegetable oil and flour. Cook, stirring constantly, for 4 to 6 minutes to make a blond roux.

Whisk in the milk and bring to a boil. Season with nutmeg, salt, and white pepper. Reduce to a simmer and cook for 6 to 8 minutes until the sauce coats the back of a spoon.

Remove from heat and fold in the grated Gruyère until melted.

Layer the blanched potato slices in a buttered baking dish. Pour the Gruyère sauce over the potatoes.

Bake for 20 to 25 minutes until golden and bubbly. Garnish with chives and serve.
