Emeril's classic Gruyere cheese puffs — a choux pastry ring baked until firm and golden, served warm as an elegant appetizer.

- 1 cup whole milk
- 4 tbsp unsalted butter
- 1 cup all-purpose flour
- 0 to taste salt and freshly ground black pepper
- 4 whole eggs, at room temperature
- 4 oz Gruyere cheese, grated

Preheat the oven to 400°F.

In a saucepan, combine the milk and butter. Bring to a boil.

Add flour, salt, and pepper all at once and stir quickly with a wooden spoon until smooth, about 1 minute.

Remove from heat. Stir in eggs one at a time, stirring well after each. Stir in the grated Gruyere.

On a parchment-lined baking sheet, place spoonfuls of the mixture 1/4-inch apart in a circle, forming a ring.

Bake at 400°F for 10 minutes, then reduce heat to 350°F and bake for 25 minutes more.
