Grilled White-and-Sweet-Potato Salad

Grilled slices of white and sweet potatoes tossed in a grainy mustard-sherry vinaigrette with olive oil and chopped scallions — a wonderful warm-weather side salad.

  • 1 lb waxy potatoes, peeled and sliced 1/2-inch thick
  • 1 lb sweet potatoes, peeled and sliced 1/2-inch thick
  • 4 tbsp extra-virgin olive oil, divided
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp grainy mustard
  • 1 tbsp sherry vinegar
  • 1 bunch scallions, both white and green parts, chopped

Instructions

    Heat grill or oven to 450°F. Toss potato slices with half the olive oil; season with salt and pepper.

    Grill over medium heat, turning as they brown, or roast on a baking sheet, turning once — about 10-15 minutes total.

    Whisk together remaining olive oil, mustard, and vinegar. Toss warm potatoes with dressing and scallions. Serve warm or at room temperature.
