Grilled Sardines Over Portuguese Stew

- 4 tbsp olive oil
- 1 cup minced onions
- 2 bay leaves
- 0.5 lb chorizo sausage, sliced 1/4-inch thick
- 12 whole garlic cloves, peeled and blanched
- 1 cup peeled, seeded, chopped fresh tomatoes
- 0.5 lb new potatoes, quartered
- 2 tsp chopped fresh thyme leaves
- 2 tsp chopped fresh basil
- 2 tsp chopped fresh parsley leaves
- 1 quart chicken stock
- 16 fresh sardines, cleaned

In a large saucepan over medium-high heat, heat 2 tablespoons olive oil. Add onions and crushed bay leaves. Season with salt and pepper; sauté for 3 minutes.

Add the chorizo and garlic cloves; cook for 2 minutes. Add tomatoes, potatoes, thyme, basil, parsley, and chicken stock. Bring to a boil.

Reduce heat and simmer for 20 to 25 minutes until potatoes are tender. Adjust seasoning.

Thread sardines onto soaked wooden skewers. Brush with remaining olive oil and season with salt and pepper.

Grill the sardines over high heat for 2 to 3 minutes per side.

Ladle the Portuguese stew into deep bowls and lay the grilled sardines on top.
