Grilled Pizza

Homemade pizza dough grilled directly over high heat, then topped with fresh tomatoes, mozzarella, olives, roasted red peppers, and basil.

  • 1 cup warm water
  • 0.3 oz package active dry yeast
  • 1 pinch white sugar
  • 2 tsp kosher salt
  • 1 tbsp olive oil
  • 3 0.3 cup all-purpose flour
  • 2 whole cloves garlic, minced
  • 1 tbsp chopped fresh basil
  • 0.5 cup olive oil for topping
  • 1 tsp minced garlic for topping
  • 0.3 cup tomato sauce
  • 1 cup chopped tomatoes
  • 0.3 cup sliced black olives
  • 0.3 cup roasted red peppers
  • 2 cup shredded mozzarella cheese
  • 4 tbsp chopped fresh basil for topping

Instructions

    Dissolve yeast in warm water with a pinch of sugar; proof 10 minutes until frothy. Add salt, olive oil, and flour; mix until dough pulls away from bowl sides. Knead until smooth, 6-8 minutes.

    Place in a well-oiled bowl, cover with a damp cloth, and let rise until doubled. Punch down and knead in garlic and basil. Let rise again until doubled.

    Preheat grill for high heat. Heat 1/2 cup olive oil with 1 teaspoon garlic for 30 seconds in the microwave.

    Divide dough and form into 2 oblong shapes about 3/8 to 1/2 inch thick on baking sheets. Brush grate with garlic oil. Place dough on hot grill — it will puff almost immediately.

    When bottom crust is lightly browned, flip with two spatulas. Quickly brush with oil, then spread tomato sauce, tomatoes, olives, and roasted peppers. Sprinkle with cheese and basil. Close lid and cook until cheese melts. Repeat for second pizza.
