Grilled Lamb Patties With White Bean And Mint Relish

- 1 0.5 lb ground lamb
- 2 tbsp minced shallots
- 2 tbsp minced garlic
- 2 tbsp chopped mint
- 2 tsp Creole seasoning
- 2 tsp ground cumin
- 1 tsp ground chili powder
- 1 egg
- 3 tbsp olive oil
- 4 oz bacon, chopped
- 0.5 cup small-diced red onions
- 0.5 cup small-diced fresh tomatoes, seeded
- 1 cup white navy beans, cooked until tender
- 2 tbsp chiffonade of mint
- 1 cup veal reduction or rich beef stock, warm

In a bowl, combine the lamb, shallots, garlic, mint, Creole seasoning, cumin, chili powder, salt, pepper, and egg. Mix well and form into 12 small patties.

In a sauté pan, render the bacon until crispy, 6 to 8 minutes. Remove and drain, reserving 2 tablespoons of bacon fat.

For the relish: combine the bacon, red onions, tomatoes, garlic, lemon juice, white beans, mint, and reserved bacon fat. Season with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add the lamb patties and pan-fry for 4 minutes per side.

Spoon the relish into the center of serving plates. Place 2 to 3 lamb patties on top. Spoon warm veal reduction over the patties and garnish with parsley.
