Grilled Lamb Patties With A White Bean And Mint Relish
Seasoned ground lamb patties with cumin and mint grilled to perfection, served with a warm bacon, white bean and mint relish.

- 1 0.5 lb ground lamb
- 2 tbsp minced shallots
- 2 tbsp minced garlic
- 2 tbsp chopped mint
- 2 tsp Creole seasoning
- 2 tsp ground cumin
- 1 tsp ground chili powder
- 1 tsp salt
- 0.5 tsp freshly ground black pepper
- 1 egg
- 3 tbsp olive oil
- 4 oz bacon, chopped
- 0.5 cup small diced red onions
- 0.5 cup small diced fresh tomatoes, seeded
- 1 tsp chopped garlic
- 0 juice of one lemon
- 1 cup white navy beans, cooked until tender
- 2 tbsp chiffonade of mint

In a mixing bowl, combine the ground lamb, shallots, garlic, mint, Creole seasoning, cumin, chili powder, salt, pepper and egg. Mix well. Form into 4 patties.

Preheat the grill. Brush patties with olive oil. Grill for 4-5 minutes per side for medium doneness.

For the relish: In a saute pan, render the bacon until crispy. Add the onions and saute for 2 minutes. Add the tomatoes, garlic, lemon juice and beans. Toss well and heat through. Stir in the mint chiffonade. Season with salt and pepper.

Serve the lamb patties topped with the white bean and mint relish.
