Grilled Eggplant Prosciutto And Mozzarella Roulades

Grilled eggplant slices rolled with prosciutto and fresh mozzarella, drizzled with balsamic and served over grilled radicchio.

  • 12 slice eggplant, about 1/4-inch thick
  • 0 drizzle olive oil
  • 0 to taste salt and freshly ground black pepper
  • 12 slice prosciutto ham
  • 12 slice fresh mozzarella, about 1/8-inch thick
  • 1 small head radicchio lettuce
  • 0 drizzle extra virgin olive oil
  • 0.3 cup balsamic syrup

Instructions

    Preheat the grill. Season both sides of the eggplant slices with olive oil, salt and pepper. Grill for 2 minutes on each side.

    Lay a piece of prosciutto on one piece of grilled eggplant. Place a slice of mozzarella on top of the prosciutto. Carefully roll up the eggplant and secure with two toothpicks. Repeat with remaining pieces.

    Cut the radicchio in quarters. Toss with olive oil, salt and pepper. Grill for 1 minute on each side. Remove and cut away the core. Shred the radicchio.

    Arrange the shredded radicchio on plates. Place the eggplant roulades on top. Drizzle with balsamic syrup and serve.
