- 12 slice eggplant, about 1/4-inch thick
- 2 tbsp olive oil
- 12 slice prosciutto ham
- 12 slice fresh mozzarella cheese, 1/8-inch thick
- 1 small head radicchio lettuce
- 2 tbsp extra-virgin olive oil
- 0.3 cup balsamic syrup

Preheat the grill. Season both sides of the eggplant slices with olive oil, salt, and pepper.

Grill eggplant for 2 minutes per side until just tender with grill marks.

Lay a slice of prosciutto on each piece of grilled eggplant, then top with a slice of mozzarella.

Carefully roll up the eggplant and secure each roll with two toothpicks.

Arrange radicchio leaves on plates. Place roulades on the radicchio. Drizzle with extra-virgin olive oil and balsamic syrup.
